Woosamgyeop Deopbap (Korean Beef Belly Rice Bowl)

🥢 Introduction

Woosamgyeop Deopbap (우삼겹 덮밥), or Korean Beef Belly Rice Bowl, is one of those Korean dishes I keep coming back to whenever I need a quick and comforting meal.

I started making this when I wanted something delicious for dinner without spending too much time in the kitchen. Woosamgyeop, or thinly sliced beef belly, cooks in just a few minutes, which makes it perfect for busy days. I usually have rice ready at home, so all I need to do is cook the beef, add the onions and simple sauce, and put everything over warm rice.

What I love most is how simple the ingredients are, but the flavor is still so satisfying. The beef is rich and savory, while the onions become soft and slightly sweet as they cook. Everything is coated in a simple soy sauce-based seasoning, then topped with a soft fried egg and fresh green onions.

I’ve made this dish a few different ways, but I found that you really don’t need a lot of sauce. Woosamgyeop already has plenty of flavor and fat, so too much sauce can make the rice bowl feel heavy and greasy. Keeping the seasoning simple lets the beef and onions shine.

And the fried egg is definitely my favorite part. When the soft yolk breaks and mixes with the warm rice and savory beef, it makes every bite rich and creamy. It’s such a simple addition, but it makes the whole dish feel much more satisfying.

This recipe is also great if you’re new to Korean cooking. You don’t need hard-to-find ingredients or complicated cooking techniques. With a few everyday ingredients like soy sauce, sugar, garlic, and rice, you can make a comforting Korean meal at home in about 20 minutes.

If you’re looking for an easy Korean rice bowl for a busy weeknight, give this Woosamgyeop Deopbap a try. It’s simple, filling, and the kind of meal you’ll probably want to make again.

🍽️ Serving Tips

Serve the beef over hot, freshly cooked rice and top it with a fried egg. I like to keep the yolk slightly soft so it mixes into the warm rice and savory beef, making each bite rich and creamy. Add sliced green onions and a sprinkle of sesame seeds right before serving for a fresh finish and a little extra texture. For the best flavor, serve it right away while the beef and rice are still warm.

❓ FAQ

Q. What is woosamgyeop?

A. Woosamgyeop (우삼겹) is thinly sliced beef belly. It has a good amount of marbling and cooks quickly, so it’s great for making a quick rice bowl.

Q. Can I use another cut of beef?

A. Yes. If you can’t find woosamgyeop, you can use thinly sliced chuck or shaved beef. Just keep in mind that leaner cuts won’t be quite as rich.

Q. Do I need to drain the beef fat?

A. Woosamgyeop releases quite a bit of fat as it cooks. You don’t need to drain all of it. I usually leave about 1 tablespoon in the pan because it adds more flavor to the beef and onions.

Q. What if the beef is too salty?

A. If the beef turns out too salty, add more cooked rice to balance the flavor. You can also add a little extra onion and toss everything together. If needed, add a small splash of water while reheating, but add it gradually so the sauce doesn’t become too watery.

Q. Can I make this ahead of time?

A. Yes. Store the cooked beef and onions in an airtight container in the refrigerator for up to 3 days. When you’re ready to eat, reheat the beef and serve it with fresh rice and a fried egg.
