✓ 5 tbsp Corn Syrup (or Rice Syrup) – Creates a glossy finish and adds gentle sweetness without making the sauce overly sugary.
✓ 1 tbsp Oyster Sauce – Brings extra umami and richness to the sauce.
✓ 1 tbsp Minced Garlic – Don’t reduce the garlic! It softens as it cooks and gives the sauce its signature flavor.

🍳 How to Make Korean Soy Sauce Braised Chicken
Step 1. Prepare the Chicken
Pat the chicken drumsticks dry with paper towels. Using a sharp knife, make 2 deep slits on both sides of each drumstick. Season lightly with 1 tsp salt and ¼ tsp Ground black pepper, then let the chicken rest for about 15–20 minutes.

Step 2. Brown the Chicken
Heat 1 tablespoon of cooking oil in a large pan over medium-high heat. Add the chicken drumsticks and cook for about 8–10 minutes, turning only after each side is nicely browned. Don’t rush this step—the golden color adds extra flavor and helps the chicken stay beautiful as it braises in the sauce.

Step 3. Make the Sauce
While the chicken is browning, whisk together 5 tablespoons soy sauce, 3 tablespoons cooking wine, 5 tablespoons corn syrup, 1 tablespoon oyster sauce, 1 tablespoon minced garlic, 1 teaspoon minced ginger (optional), and ¼ teaspoon black pepper in a small bowl until well combined.

Step 4. Braise the Chicken
Add the whole garlic cloves to the pan, then pour in 1 cup (250 ml) of water and the prepared sauce. Bring it to a boil over medium-high heat. Once it starts boiling, reduce the heat to medium and simmer uncovered. Turn the chicken once or twice while it cooks. Continue simmering until the sauce has reduced by about half and is thick enough to lightly coat the chicken with a glossy finish. Depending on your stove, this usually takes 20–30 minutes.

Step 5. Add the Green Chili Peppers
When the sauce has reduced by about half and turned glossy, add the sliced green chili peppers. Cook for about 1 minute to infuse the sauce with a fresh, mild kick.

Step 6. Garnish and Serve
Turn off the heat and sprinkle with toasted sesame seeds just before serving. Enjoy with a bowl of warm steamed rice.
