🥢 Introduction
Cucumber salad sounds like one of the easiest things to make. Just slice a cucumber, add some seasoning, and it should work… right? That’s what I thought too, but it didn’t always turn out that way.
I’ve made this a few times, and it often ended up watery and a little bland. It looked fresh at first, but after a few minutes, the cucumbers would release too much water and the flavor just wouldn’t stick. At first, I thought I just needed to fix the sauce—maybe more soy sauce, more garlic, something stronger. But no matter what I changed, it still felt off.
It turns out the problem wasn’t the seasoning, but how I was treating the cucumbers. In Korea, this style is called oi tangtangi, named after the “tang-tang” sound of smashing them.
After trying this recipe a few times, I realized that the biggest difference wasn’t the seasoning itself, but how the cucumbers were prepared. When I simply sliced them, the salad always turned watery and the flavor didn’t stick well.
Once I started smashing the cucumbers and salting them first, the texture stayed crisp and the dressing actually absorbed properly. That small change completely fixed the problem for me.

Once I started smashing them instead of just slicing, everything changed. The rough, uneven edges help the dressing cling better, and they release some excess moisture first so the flavor doesn’t get diluted later. The cucumbers stay crisp, and the seasoning actually soaks in instead of sliding off.
It’s still a very simple dish, but this small step makes all the difference.
🛒 Ingredients
✔ 2 cucumbers
✔ 2–3 pinches of salt (to draw out excess moisture)
✔ Sesame seeds (lightly crushed for more aroma)
Dressing
✔ 1.5 tbsp soy sauce (Korean soy sauce is lighter and less salty)
✔ 1 tbsp vinegar (a mild vinegar gives a cleaner, fresher taste)
✔ 1 tsp sugar
✔ 1 tsp minced garlic
✔ 1 tsp sesame oil

👩🍳 Instructions
Step 1
Smash the cucumbers into large chunks using the side of a knife or a rolling pin.
Remove the larger seeds to reduce excess moisture.

Step 2
Sprinkle a few pinches of salt and let them sit for 10 minutes.

Step 3
Drain the water and gently squeeze once or twice. Do not rinse.

Step 4
Add all the ingredients and mix well.

Step 5
Let it rest for 5 minutes before serving.

🍽️ Serving Tips
✔ Serve chilled or slightly cold for the best texture and flavor
✔ Pairs well with rice, grilled meat, or any rich dishes
✔ Best enjoyed within 10–15 minutes after mixing
✔ The cucumbers may release more water over time, so stir lightly before serving again
💡 Additional Notes
✔ If your cucumbers have large or many seeds, remove some of them to reduce excess moisture
✔ Don’t skip the salting step — it helps prevent the salad from becoming diluted
✔ Lightly crushing the sesame seeds brings out more aroma
✔ Adjust the vinegar to your taste for more or less tang
✔ If it tastes slightly strong at first, that’s normal — the flavor will balance out after a few minutes
❓ FAQ
Q. What if it tastes bland?
If it tastes bland, add a little more soy sauce or vinegar. Also make sure you removed enough excess moisture — too much water can dilute the flavor.
Q. Can I skip smashing the cucumbers?
Smashing helps the dressing stick better. If you skip it, the flavor won’t absorb as well.
Q. Why does my cucumber salad turn watery?
Cucumbers naturally release water over time. Salting and lightly squeezing them first helps reduce excess moisture.
Q. Do I have to remove the seeds?
Not always, but if your cucumbers have large or many seeds, removing some will help prevent the salad from becoming watery.
Q. Can I make this ahead of time?
You can, but it’s best enjoyed within 10–15 minutes for the best texture. Over time, it may release more water.
Q. What type of vinegar works best?
A mild vinegar works best for a clean, fresh taste. Korean vinegar is a good option, but others can work too.
